Thai Coconut Curry Ramen Z with Chicken

Ingredients

1 package Ramen Z Miso Flavor

1 tsp olive or coconut oil

3 tsp diced red pepper

3 tbsp diced onion

1 tsp ground ginger
-
1 clove grated garlic

Half a lime
-
1 small green chili (for spice) seeded and minced

⅛ tsp cumin (ground)

1 Small chicken breast (cubed)

1/4 cup full fat coconut milk
-
3 tbsp water
-
3 tbsp shredded carrots

1 tsp thai red curry paste
Directions
Combine chopped garlic, diced green chili, and lime juice into a bowl with coconut cream and red curry paste. Stir to combine.
Add chicken to coconut cream mixture and cover and place bowl in the fridge until all other ingredients are prepared.
Slice red peppers and separate broth from Ramen Z and set aside.
Remove chicken from the fridge and add pieces of chicken to a hot pan with your choice of oil or butter. Once it is done (about 3 min) remove chicken from the pan while keeping the excess sauce in the pan. To the same pan add carrots, ginger, and red pepper and bring to a simmer.
Once simmered, add broth to the same pan and bring this to a quick simmer.
Remove from heat and add noodles and chicken back to the same pan. Bring this to a quick simmer and you are ready to serve with your preferred toppings.
