Konjac

Made from Konjac, Konnyaku

Konjac, also known as ‘konnayku’ in Japanese, is derived from the plant Amorphophallus konjac, native to East and Southeast Asia. This plant’s edible part is its corm, or bulbo-tuber. It’s recognized by various names including konjaku, konnyaku potato, devil’s tongue, voodoo lily, snake palm, and elephant yam.

Distinguished by its mottled grey appearance, konjac has a firmer texture compared to traditional gelatins. Its flavor is subtly unique, typically hinting at saltiness with an oceanic essence, often attributed to the seaweed powder added during processing (although some variants do not include seaweed). The appeal of konjac lies more in its texture than its taste.

In Japanese cuisine, konjac is a versatile ingredient, featuring in dishes like oden and sukiyaki. Shirataki, also known as Ito Konnyaku, showcases konjac in the form of noodle-like strips, adding a distinctive texture and appeal to various Japanese culinary creations.

 Very Few Digestible Carbs

Konjac, also known as shirataki noodles, is a unique food item that boasts minimal digestible carbohydrates while being rich in glucomannan fiber. This high-fiber content has long established konjac as a natural remedy for constipation and a detoxifying agent for the liver. Additionally, its ability to retain moisture contributes to skin hydration, aiding in the preservation of a youthful complexion.

Glucomannan, a soluble dietary fiber derived from the root of the konjac plant, is known for its unique ability to pass through the body undigested. Once it reaches the intestines, it acts as a natural detoxifier, absorbing toxins and waste materials and then effectively eliminating them through the stool. This process makes konjac an ideal food for both alleviating constipation and supporting dietary goals.

Studies conducted by the National Center for Biotechnology Information have demonstrated the effectiveness of soluble dietary fiber supplements, like glucomannan, in aiding weight loss in overweight individuals. By incorporating konjac into their diet, people can experience a natural, beneficial impact on their body weight management.

Reduce Cholesterol

Water-soluble fibers, such as glucomannan, are widely recognized for their role in supporting healthy cholesterol levels. Glucomannan, specifically, works by slowing down the absorption of carbohydrates and aiding in the reduction of cholesterol. This dual action is key in the prevention of diabetes and various lifestyle-related diseases. Research published in The American Journal of Clinical Nutrition has shown that the administration of konjac glucomannan can lead to a significant decrease in total cholesterol levels, including a reduction in LDL cholesterol, often referred to as ‘bad’ cholesterol.

Konjac is enriched with ceramide, a compound known for its ability to decrease moisture evaporation from the skin, making it an excellent option for individuals with dry skin. There is a growing belief that consuming ceramide can be more effective than topical application. Research from Scientific & Academic Publishing has indicated that glucomannan, a key component of konjac, may offer benefits as a topical treatment for acne and contribute to the overall improvement of skin health.
