This recipe combines the rich, aromatic flavors of Thai coconut curry with the light and refreshing texture of our shirataki noodles. With tender chicken, fresh vegetables, and a creamy coconut broth, this dish is a perfect balance of spice and comfort. It’s a meal that will transport you to the vibrant streets of Thailand, all from the comfort of your own home.

Ingredients
- 1 pack Ramen Z Miso
- 1 tsp olive or coconut oil
- 3 tsp diced red pepper
- 3 tbsp diced onion
- 1 tsp ground ginger
- 1 clove grated garlic
- 1/2 lime
- 1 small green chili (for spice) seeded and minced
- 1/8 tsp cumin (ground)
- 1 Small chicken breast (cubed)
- 1/4 cup full fat coconut milk
- 3 tbsp water
- 3 tbsp shredded carrots
- 1 tsp thai red curry paste
Instructions
- Combine chopped garlic, diced green chili, and lime juice into a bowl with coconut cream and red curry paste. Stir to combine.
- Add chicken to coconut cream mixture and cover and place bowl in the fridge until all other ingredients are prepared.
- Slice red peppers and separate broth from Ramen Z and set aside.
- Remove chicken from the fridge and add pieces of chicken to a hot pan with your choice of oil or butter. Once it is done (about 3 min) remove chicken from the pan while keeping the excess sauce in the pan. To the same pan add carrots, ginger, and red pepper and bring to a simmer.
- Once simmered, add broth to the same pan and bring this to a quick simmer.
- Remove from heat and add noodles and chicken back to the same pan. Bring this to a quick simmer and you are ready to serve with your preferred toppings.
